Domaine Leflaive is one of the great wine estates in Burgundy. Based in Puligny-Montrachet, it’s famous for exceptional Premier and Grand Cru bottlings. It also has a négociant arm of the company producing less-expensive wines, but made in the same fashion as wines from its own vineyards.
Laflaive harvests the chardonnay grapes from a stunning 23.5-acre bio-dynamically farmed site in the Mâcon, where the vines average 25 years of age, and brings them back to Puligny for processing. There, the wine undergoes stainless steel fermenting with indigenous yeasts, undergoing full malolactic (secondary) with 15 months of barrel fermentation.
Light golden-yellow in color, the wine has a melange of apple and pineapple fruit aromas, along with a nice flinty note, and the suggestion of salinity. On the palate, there are similar flavors of apple and pineapple, accompanied by a nice juicy acidity that lasts through the long, off-sweet finish. This wine would complement most appetizers, but especially shellfish. And, it can do double duty with most fish entrees as well. A word of advice: this is an elegant and crisp wine. I wouldn’t serve it after a California chardonnay. To do so would diminish its elegance and increase its crispness.
