Unexpected Item: Portobello Mushroom Tower at Summit House

For decades, people have gone to Summit House for prime rib and Prime steak. Now listed among popular house specialties such as Colorado lamb shank is an entrée that suggests a tall burger, yet it has no meat on it, not even an Impossible patty. The vegan Portobello Mushroom Tower ($37) features two huge oak-wood-grilled portobello caps cradling layers of roasted zucchini, summer squash, and red bell pepper, all freshly picked at nearby Black Sheep Farms.
