Los Angeles hotpot Joon Shabu Shabu brings its interactive experience to a spot next to the AMC Tustin 14 at the District with Joon Shabu 2. Amid sleek wood paneling, stainless steel highlights, and polished concrete floors, diners dip their choice of protein, vegetables, or noodles into boiling water or broth flavored. Options include Jidori chicken, Kurobuta pork shoulder, Angus ribeye, seafood combos (lobster, black tiger shrimp, salmon and scallops), and vegetarian. All come with black rice, udon or ramen noodles, two of five house-made dipping sauces, and a beautiful plate of napa cabbage, bok choy, broccoli, carrots, tofu, and enoki mushrooms. Dipping sauces go beyond traditional ponzu to sesame Goma, sweet and savory Umami, and the don’t-miss fluffy garlic Ninniku. Among possible soup bases are the vegan Veggito and the Sizzler with habaneros and ghost peppers. Start with dumplings, end with mochi ice cream. 2453 Park Ave., Tustin, 714-549-1432, joonshabushabu.com
