You might say honey is the theme at the new Marriott Irvine Spectrum. Both the restaurant, Heirloom Farmhouse Kitchen, and the rooftop bar, Hive & Honey, seem to specialize in the golden nectar. Heirloom, an airy space off the lobby that looks out to the pool, is filled with distinctive woods and farm-inspired surrealistic paintings. Chef Paolo Buffa’s Cal-Med “provisions” include Ancient Bread, a selection featuring rosemary sea-salt ciabatta, sage prosciutto, and cranberry pecan; among large plates is a brick-roasted Jidori chicken with Medjool dates, butternut squash, and toasted almonds; for dessert, consider a pie of macerated gala apples topped with a honey crunch. The rooftop bar, Hive & Honey, is an open-air venue that offers endless urban and mountain views, elaborate whimsical chandeliers, and heat lamps resembling larger-than-life white floor lamps. Featured cocktails are all kissed with honey in some fashion, as are the cornbread puffs and a grass-fed burger (limited to 25 per night). 7905 Irvine Center Drive, Irvine, 949-759-0200, marriottirvinespectrum.com
