Here’s How to Make Hatch’s Cocktail the Walker at Home…

Hatch bartender Trevor Kawamoto offers his take on Don The Beachcomber’s classic Zombie and renames it the Walker after the mobile deceased in the popular AMC series “The Walking Dead.” Donn Beach created the Zombie in 1934 to cure a regular’s hangover, but his recipe artfully masked the alcohol. Kawamoto brings the spirits to the fore, crediting Hamilton 151 Overproof: “Its job is to wake you up, kick you in your teeth, and expect you to go back to work!” If you order it, you might also consider Kawamoto’s off-menu Smoking Zombie, complete with pyrotechnics. Either is killer.

Ingredients: hatch-cocktail
1 ounce Don Q Gold Puerto Rican Rum
1.5 ounces Appleton Estate Signature
Blend Jamaica Rum
.5 ounce Hamilton 151 Overproof
Demerara River Rum
.75 ounce The Bitter Truth Falernum
.75 ounce lime juice
1 ounce Don’s Mix: 2:1 ratio grapefruit
juice to cinnamon simple syrup
Dash of Angostura bitters

Finish:
.5 ounce grenadine
Absinthe spritz
Lime, mint, and maraschino cherry for garnish

Fill shaker half full with ice and all but the finishing ingredients. Shake 10 to 15 seconds; pour into tall Collins-style tiki glass. Add a drizzle of grenadine, spritz of absinthe, garnish, and a straw. Drink till you become a zombie.
