Yellow Box Bakery, founded by Lucy and Jimmy Weita, offers everything from custom cakes to baked goods celebrating Lucy’s Hispanic heritage and Jimmy’s love of mashing concepts together. The signature filled Bonita Conchita comes in three traditional flavors (chocolate, vanilla, and strawberry). How would you describe Yellow Box Bakery?
Yellow Box Bakery is our “head full of dreams” coming to realization through persistence and resilience. It was bred (pun intended) two years ago from our passion for baking and music, and is more than just a bakery; it’s an extension of who we are. The name itself is derived from the song “Yellow” by our favorite band Coldplay.
What was your vision for the bakery?
From the start, we knew we wanted to integrate the ties that bind us together into the essence of our business. Coldplay has always been the common thread that has interwoven our story, and created the soundtrack to our life. With both of us having professional careers in the culinary industry, we started Yellow Box as a side business focusing on custom cakes. But in early 2020, when we were faced with the uncertainty of our future due to this pandemic, we made the decision to grow our offerings and start developing new ideas we felt people might not only find enticing, but that could perhaps create some comfort and nostalgia during this trying time as well. So with the initial idea coming from Lucy wanting to delve deeper into the baked goods of her Hispanic heritage and Jimmy’s love of mashing concepts together, the filled Bonita Conchita was born.
Tell us about your signature flavors.
We started out with three flavors based on traditional Mexican flavored milks: choco milk, vanilla milk and fresa (strawberry) milk. They were well received, so we decided to continually add a rotating limited time only (LTO) conchita with a focus on things that are important to us or that we like to celebrate. Some past favorites have been the pink ribbon adorned Chi Chi Conchita in support of breast cancer awareness, the red, white and green arroz con leche filled conchita with gold leaf for Hispanic heritage month, and the sugar skull dulce de leche filled conchita for Dia de los Muertos. We showcased a pumpkin cheesecake filled conchita with graham cracker crumble during fall and a peppermint cocoa conchita with a candy cane crunch for Christmastime. Currently, we are excited for the release of our latest, and first jelly-filled conchita, lovingly called “Strawberry Swing.” It’s a chocolate-dipped strawberry conchita sprinkled with rose dust, just in time for Valentine’s Day.

Aside from our conchitas, we continue to grow our family while expanding our small business. We don’t want to lose the focus of being a custom bakery, as we truly enjoy working with each of our clients individually to bring whatever items they desire from vision to fruition—and always delivered in our signature yellow box! ¡Viva Conchita!
