At last, Native Son Alehouse’s discerning brew lovers can order the ideal chow to accompany those pints, thanks to Ember BBQ, a well-regarded pop-up that now parks its smoker on Alehouse’s downtown Santa Ana rooftop. Chef-owner Derrick Foster, born and raised in Kansas City, and fiancee Kylie Gordon make the most of their residency by serving signature eats such as sliced-to-order Colorado Angus beef brisket, St. Louis pork ribs, smoked chicken, and pulled pork. Don’t miss Hogchos, Foster’s twist on typical nachos that stacks chicharron with pulled pork, a smoky cheese sauce, pork jerky, pickled onion, sour cream, jalapenos, and his house-made barbecue sauce. Also terrific are the from-scratch banana pudding and the Rancho Gordo barbecue beans, studded with brisket burnt ends. A limited snack menu is served Tuesday and Wednesday from 11 a.m. until sold out, and a large Smokehouse Menu is offered Thursday through Sunday from 11 a.m. until sold out.
