At Monarch Beach Resort, chef-restaurateur Michael Mina replaces his high-end Stonehill Tavern with the even more luxe Bourbon Steak, opening up the space and adding dramatic flair to many of the menu presentations. Top-tier cocktails juxtapose old- and new-school interpretations of classics: The new-school New York Sour is topped with an edible-ink wave printed on rice paper, and the martini cart is a first for Mina’s 36 restaurants. A trio of flavored fries and dipping sauces provides a substantial amuse-bouche. Among familiar Mina preparations are the ahi tuna tartare with Asian pear, pine nuts, Scotch bonnet pepper, mint, and sesame, mixed tableside, and his Maine lobster potpie, plated tableside. For a spectacular presentation, try the cast-iron-broiled platter of oysters, gulf shrimp, lobster, and King crab, with red miso butter and a pour of lemongrass tea for a long, eye-popping sizzle. Executive chef Bryan Brown offers a broiled tai snapper for two and beef cuts such as a Wagyu strip loin. Warm spiced beignets are served with vanilla crème brûlée for dipping.
