Owners of The Blind Pig Kitchen + Bar and The Trough Sandwich Kitchen in Rancho Santa Margarita have opened a second location of The Trough on the Balboa Peninsula near the pier and Fun Zone. Highlights of executive chef Karl Pfleider’s menu include the Chashu Pork sandwich with braised (and prettily rolled) pork belly, marinated boiled egg, arugula, house-made kewpie mayo, and pickled ginger on a corn roll; the spaghetti sandwich, above, with Bolognese sauce, Parmesan cheese, and garlic-herb butter on a cornmeal roll; the tuna-salad sandwich, featuring pole-caught tuna, pickled celery, dried cranberry, and roasted almonds on a multigrain roll; and the generous side of chili cheese tots. Pork Belly & French Toast, made with brioche, is a breakfast fave.
