The rustic, hipster decor at casual new Project West gastropub in Westminster includes dim lighting, exposed rafters, and part of the ceiling covered in Astroturf, which makes the emergency sprinkler system look like lawn sprinklers. The mainstays are burgers—variously made with beef, lamb, and bison—and Southern California craft beers.
Most popular burger: the Bacon Jam on a pretzel bun with jalapeno-onion-bacon jam and habanero cheddar. Other favorites include the M. Bison, a bison patty and smoked gouda on a pretzel bun, and the Lamburghini, with Greek-style spiced lamb on a brioche bun; get the best of both worlds by requesting a half lamb/half bison patty on either. Groovy side: fried-garlic-topped truffle Parmesan fries. Other highlights are the Japanese hot dog with wasabi aioli, bonito flakes, seaweed strips, and togarashi powder, above; and house-made spaghetti with pork cheek, Fresno chile, and garlic. Try the cantaloupe horchata.
