Bite: Steamin’! Kettlebar

Find pan roasts, bouillabaisse, jambalaya, gumbo, étouffée, and a lot more that does right by Southern-style seafood at new Kettlebar Steam Cooking in Tustin. Its first location is among the most popular destinations at the Anaheim Packing House, but this spot in the fledgling Union Market at The District is smart looking and far more spacious and upscale with its added oyster station.

The house pan roast combines snow crab, lobster, shrimp, chicken, and rice in a tomato-cream base. Like it spicier? Add the terrific house-made hot sauce. House gumbo’s a mix of roux, chicken, andouille sausage, shrimp, crab, and rice. Pickles, lemon vinaigrette, and honey remoulade dress the soft-shell crab po’boy. As for spirits, expect Southern and south-of-the-border. In addition to Rittenhouse rye whiskey and orange bitters, the Southern Gentleman cocktail uses Aztec chocolate bitters and chiles—and a “Star Wars” Death Star ice sphere.
