Chef Laurent Brazier, executive instructor of La Cuisine Culinary Arts cooking school and catering company in Costa Mesa and chef at the now defunct Picayo restaurant in Laguna Beach, honors his French heritage with the new Bistro Papillote at OC Mix. Modeled after a traditional Parisian cafe, the breakfast-lunch spot replaces the Seventh Tea Bar. “It will be as close to France as you can get in Costa Mesa,” says Brazier, who also is a certified sommelier. The menu features classics such as crêpes, pan bagnat, croque madame, above, quiche, salade niçoise, escargot, and duck pâté, all available for dining in or grab-and-go. Only French wines are served; coffee is from adjacent Portola Coffee Lab.
