Behind the Counter With Evan Marks of The Ecology Center

Seeking real-world sustainability, Evan Marks founded The Ecology Center in San Juan Capistrano as a hub of eco-education.

How central is food to the center?
Food is the core of our work. We’re located on a farm that has been in production for 140 years, one of the only certified organic farms in the county.

What’s your day-to-day role?
Much of my work is orchestrating a vision connecting with farmers and chefs, overseeing food, and garden programming.

Are you vegetarian?
I like to call my preferred food the peasant diet—heavy on bread, cheese, and greens. My wife and I eat lots of veggies with the occasional seafood addition, no meat.

What’s next?
Expanding our reach to a national audience. If a deep dive into hands-on ecological living can happen in Orange County, I’m fairly certain we can grow outward from here.
