The former head sushi chef at Katsuya in Beverly Hills and former bar manager at Mayfield in San Juan Capistrano join forces at Union Social, the sleek new raw bar and upscale night spot at Rodeo 39 Public Market. Do Kyun Kim offers shellfish, sushi, and sashimi; highlights of a first tasting included seaweed salad, seabream sashimi, fried oysters, and yellowtail collar. Opting for opulence? Add uni or caviar to any raw seafood dish. Julian Flores Torres’ Asian-inflected cocktails—notably the lychee-coconut martini, Tetsu aged-bourbon sour, fruity Union Matcha, and Yugyu Butcher with gin, vodka, tequila, rum, pandan, and soda—pair ideally. But our favorite, and Torres’, is the Plank, an unlikely blending of brandy, sweet vermouth, cocoa liqueur, and bitters. Union Social’s moody interior features an illuminated bar top; deejays spin on weekends from a platform that rises above the guests.
