What’s your secret weakness?
I have a thrifting problem; I’m always on the lookout for vintage glassware in thrift stores, both decanters and glasses.
Do you have a favorite cookbook?
“The Flavor Bible” by Karen A. Page and Andrew Dornenburg. It’s my source for finding new flavor pairings.
Who’s your mentor?
My mother is from Singapore, and her delicious cooking helped me understand flavor profiles. It was her dishes that made me fall in love with cardamom and use it in my Old-Fashioned.
Do you have a hidden talent?
I do blanket art. I draw with my finger to push the fibers on a fuzzy blanket in an opposite direction. It’s a great way to start the day. (Check out his art on Instagram @beddiaries.)
What do you drink at home?
Whiskey, neat. But I seldom drink at home. For at-home entertaining, I prepare my Old-Fashioned. I use rye instead of bourbon for its spiciness.
