Pueblo is an O. C. first—a modern Spanish tapas bar with authentic dishes made with California provisions. Operating partners and sous chefs Tyler Nix and John Beber have replaced former executive chef Michael Campbell, who left in July. They work closely with Spanish chefs to keep the innovative menu fresh. Don’t miss the Atun Crudo with pickled kohlrabi, sesame, chiles, and fresh mint. The rustic, 55-seat venue includes a patio and small bar. Pueblo makes a fine neighbor for equally dauntless peers Taco Maria and Arc, increasing SoCo’s lure as a dining destination.
