Deceptively bare bones, the menu offers about 20 dishes, each named for the Mexican state that inspires each uncommon dish. Don’t miss a sublime aguachile verde (Sinaloa). Also impressive: crisp tacos ahogado in hot broth (Guerrero). Inventive cocktails lean on mescal and house-made bitters. The vintage site with soaring ceilings seats 115 and boasts modern artwork.
