1. Green Eggs & Ham // Sidecar Doughnuts
A poached egg is paired with ham, and basil hollandaise, then encased in buttery, fried dough. The shop is open until 4 p.m. (9 p.m. Friday-Saturday) but these babies are only served until 11 a.m.

2. Croissant Doughnut // Kelly’s Donuts & Burgers
“Cronuts” are everywhere, but here they’re made fresh to order. There’s a semi-related branch in Huntington Beach, but this is the location you want for your flaky pastry fix.
9475 Heil Ave., Fountain Valley, 714‑531‑0288

3. Made-To-Order Blueberry // M&M Donuts
People line up early and late to get a taste of the blueberry doughnut at this shop with flip-flopped hours. First batch is served hot at 9 p.m., last batch is at 6 a.m.
1614 W. Katella Ave, Anaheim, 714‑490‑0718

4. Crème Brulee // Donut Bar
Small but mighty, this yeast doughnut is filled with custard, then topped with a sugar glaze that crackles just like the classic dessert. Get there early or reserve ahead — they sell out!
18011 Newhope St., Fountain Valley, 714‑277‑3656,

5. Sriracha Glazed // DK’s Donuts
A Sriracha-infused glaze is crowned with salty, crunchy bacon pieces. You’ll see several DK’s Donuts in the area, but the inventive Sriracha is only served here.
3744 E. Chapman Ave., Orange, 714‑633‑5858,

7. Glazed // Mag’s Donuts & Bakery
You’d think a glazed is just a glazed, but our taste-test proved otherwise. This classic has just the right proportions; also available as doughnut holes.
2947 Harbor Blvd., Costa Mesa, 714-429-9278; 18066 Culver Drive, Irvine, 949-786-1955; 1280 Bison Ave., Newport Beach, 949-760-9278

8. Homer Simpson // Donut Bar
One of several varieties of Donut Bar’s giant yeast doughnuts, the perfectly fluffy interior is a feat of engineering. No Homer? Try the Root Beer Float or Birthday Cake.

9. Tiger Tail // Adams Avenue Donuts
Chocolate and vanilla dough are twisted into a “tail” and then glazed. Show up early on a Saturday morning and you can take in the Donut Derelicts classic car show in the parking lot as you nosh.
9015 Adams Ave., Huntington Beach, 714-962-8921
