Friday’s inaugural Mission Viejo Farmers Market at the busy civic center sure looked like a success—if massive, enthusiastic crowds are any indication. Clearly, residents of this community-minded city were beyond ready for their own farmers market, which kicked off with a fine selection of high-quality fruit and veg and prepared-foods vendors.
As mentioned earlier in Taste of Orange County, Ladera Ranch-based TJ’s Woodfire Pizza made the scene, and pizzaiolo Tim Gonzales and his wife Tina divulged some very interesting news, while cheerfully slamming out a steady stream of pizzas.
For starters, they’re going to need a bigger truck—literally. In February, Tim expects to roll out a trailer he’s designed that carries a complete prep kitchen, in addition to a Mugnaini pizza oven. Everything from mixing the dough to the final baking of the pies will take place right on this super rig. I can’t wait to see it! TJ’s is taking the Mobile Pizza Unit to another level.
And perhaps the best news is the Gonzaleses will be moving to a six-day-a-week pizza schedule, so we’ll have lots of chances to admire the new setup and indulge in their great pizza. For now, in addition to this new Friday market, they can still be found at Sunday’s Great Park market in Irvine.
