Holiday Special: Lobster Bruxie

Bruxie’s waffle sandwiches are popular enough to stoke lines out the door any hour of the day at all three locations, but on the Fourth of July there was additional incentive: “the bold fold”—Bruxie’s crisp waffle folded in half to enclose the filling—applied to an all-American lobster roll. Fresh crustaceans flown in from New England, bobbing in lobster pots right out front, whisked into the kitchen and lightly dressed, then served in the signature waffle for a patriotic $17.76. I can tell you at least two things. The newest Bruxie in Rancho Santa Margarita was cheerfully hopping by mid-morning on the holiday, and, this lobster Bruxie is a very good one. Let the East Coast have its special open-top buns—lobster Bruxie could become the new standard. (You may not have missed out!
