Stag and beaver trophy mounts, a vintage American flag, light fixtures made from old chicken feeders—the wildly divergent hunting lodge-saloon decor at Costa Mesa’s new Wild Goose Tavern makes it fun from the moment you walk in. Elevated pub grub such as craft burgers, locally made sausage, and seasonal salads satisfy, and the libations, including classic cocktails, single-barrel whiskeys, and small-batch spirits, make it a pleasure to stick around. A favorite burger is topped with fried mozzarella and cilantro chimichurri, and the wild boar sausage comes with sweet Asian slaw and Thai peanut sauce. The curved hammered-copper bar, and the back bar of reclaimed wood from an old barn in Tennessee, add to the cozy ambience, as do the comfy tufted booths.
