Anne Willan’s ‘Secrets from the La Varenne Kitchen’

The cookbook author and teacher will talk about her new book of classic formulas used in the La Varenne curriculum

Orange County is about to get another visit from internationally known cooking superstar Anne Willan, founder of La Varenne cooking school and author of 30 cookbooks. In 2013, Willan was inducted into the James Beard Foundation’s Cookbook Hall of Fame—joining a small, exclusive club of leading culinary lights like Elizabeth David and Julia Child.

This Saturday, May 2, she’ll return to Vin Goat, the Corona del Mar home of fine wines and cheese, to talk about her newest book, “Secrets from the La Varenne Kitchen” (Spring House Press, $18). What’s really exciting about this book is that it’s a compendium of recipes that Willan gave to her La Varenne students over the years. It includes fundamental building blocks of classic cuisine—stocks, sauces, desserts, complete with French-English translations—tools that can take you anywhere, in the culinary sense.

To hear about them from Willan herself right here in O.C. is a bonus. We’re lucky that she and John Bennett, Vin Goat co-owner, go way back.
