Inspired by last weekend’s unusually tropical weather, my taste buds were craving a cocktail with an exotic twist. Lucky for me, I found just the right fix at my local watering hole—Taco Rosa’s Coconut Margarita ($11).
When it comes to margaritas, I’m usually a purist, but this cocktail turned out to be the perfect fix for a hot, balmy night. Made with 1800 Coconut tequila, pineapple juice, orange liqueur, fresh-squeezed lime juice, and agave nectar, it’s finished with a dash of crème of coconut for a smooth, velvety finish. If that weren’t enough, it’s topped off with shaved toasted coconut for an added touch of tropical decadence. A cross between a margarita and a pina colada, the Coconut Margarita offers the best of two favorites blended into one.
Sound too sweet for you? Trust me, it’s not. I thought the same before I tried it, so give this one a try and you’ll be pleasantly surprised. Thanks to a heady dose of tequila and lime, this margarita packs a powerful punch.
