What’s in your Bolognese?
I do a combination of ground beef, lamb, pork, red wine, carrots, onions, herbs, spices, pork liver, and tomato.

Is it your own recipe?
It’s a house recipe that requires a lot of love and attention. An important step is in the sofrito base, made from tomatoes, peppers, onions, and garlic, which serves as the foundation for it.

Does the recipe change each day?
The base does not change, however the amount of beef/pork/lamb might vary depending on what we have to use from the whole animals we butcher.
