After celebrating 20 years since the opening of its first U.S. location last year, the culinary group continues to expand with new locations and offerings. The latest is a noteworthy lineup of vegan-friendly menu items including vegan wontons, dumplings, noodles, and noodle soups.

An exhibition kitchen at the heart of the dining room offers a glimpse into the love and labor that goes into each dumpling. What distinguishes the new vegan options from the rest of the menu is the eye-catching bright green color. This is because the team at Din Tai Fung infuses freshly squeezed spinach juice into the handcrafted dough used to make the noodles and dumpling and wonton wrappers.

Both the vegan dumplings and wontons are filled with bean curd, baby bok choy, shiitake mushrooms, wood ear mushrooms, glass noodles, and jicama. The wontons, however, are served with a delightfully spicy sauce and topped with garlic and green onions. If you’re in the mood for something light, try the vegan wonton soup with kombu broth.

Don’t miss the slurp-worthy vegan thin noodles which are made with a plant-based egg substitute made with protein-rich mung beans. They come in two options (sesame and house spicy).
