Behind the Counter

Last fall, Laguna Niguel resident Adam Wilks opened Buy ’N Bulk in Lake Forest, selling comestibles—from candy to gluten-free baking mix—by the ounce or the pound.

How many items?
We have about a thousand individual bins throughout the store.

Gluten-free choices?
Yes—the most popular are right up front with the organics. Our xanthan gum is 99 cents an ounce, half the price of other places.

Best-selling item?
Baked vegetable chips [$7.30 a pound], with carrots, potatoes, green beans, sweet potatoes, and taro root—gluten-free, too.

Next location?
Probably in the Huntington Beach-Fountain Valley area.

Personal fave?
I love our rice mixes—Cajun, Haitian—we have a bunch. I prepare one almost every night.
