Saint Marc Pub-Cafe, Bakery and Cheese Affinage, across from the beach at retail-dining destination Pacific City, is long on name and even longer on provocative new concepts. Our favorite: a bacon bar, offering nearly a dozen flavors, among them Nueske’s Wild Cherry, Tender Belly Habanero, and Coffee Rubbed. Design your own BLT! Other highlights: Ahi Hot Stone, above; steak frites; Greek fried chicken with lemon tarragon aioli; and fennel beignets with chicory coffee. Food arrives on a ceramic “paper plate,” and cocktails arrive in red plastic Solo cups. Thirty-two “draft” wines are sold by the ounce. So are the cheeses, all 100 selections. You’ll find 32 thoughtfully selected canned beers, too, and Coke Freestyle, boasting 100 soda flavor combos. Patrons order from iPads loaded with eTouch menu systems. Need a waiter? One touch alerts every “ambassador” in the room via a special watch. The bar has a retractable roof, ideal for coastal sipping. Prices range from $1.50 to $3 for bacon, up to $23 for entrees, and $8 for cocktails.
