2010
Brewmaster Victor Novak and owner Joe Manzella fill a Heaven Hill bourbon barrel with Taps’ Imperial Russian Stout. After five months, the transformation of flavors is phenomenal, eliciting notes of coconut and marshmallow that flatter the inherent dark chocolate flavors of the stout.

2010
They enter the beer in competition at the Great American Beer Festival, naming it Remy after a whiskey-loving pal
of Novak’s. Remy wins a silver medal. The remaining Remy fills 200 bottles that sell out quickly at both
Taps locations.

2012
A second round of 2,400 bottles of Remy, aged for eight months in Heaven Hill barrels, is released at Taps locations and sells out within 30 days. Fourteen rare Pappy Van Winkle whiskey barrels, procured through Jazz Patel of Corona’s El Cerrito Liquors, are filled by Taps and become Remy’s Pappy.

2012
Buffalo Trace is the next whiskey barrel to age Remy. It lends more chocolate ganache and fuller body, and yields yet another Remy variation: Trace of Remy.

2013
A fourth round of Remy, this time aged in Rittenhouse Rye barrels, shows rich caramel flavors and slightly lighter body.

2014
In February, after 15 months of aging, a release of 1,080
bottles of Remy’s Pappy sells out in 80 minutes at El Cerrito Liquor & Market in Corona, where it was available
exclusively. The 750-milliliter bottles are $35 each. Some sell on the secondary market for as much as $300 a bottle.

TODAY
Eight barrels of Remy’s Pappy and another eight
barrels of Trace of Remy are aging, with a release
estimated for late fall. Used whiskey barrels are
increasingly scarce and more expensive $150 to $350
when available.
