O.C.'s Best Free-Range Chicken Deserves the Zuni Café Treatment

I love the La Bahn chicken you’ll find listed in July Orange Coast’s “Best of 2012.” I use the birds regularly for Zuni Café-style roast chicken—the smallish, all-natural, free-range birds are perfect for the treatment. Judy Rodgers, chef-owner of the San Francisco landmark, included the recipe for the restaurant’s signature dish in her California-cuisine classic “Zuni Café Cookbook” (W.W. Norton, 2002).

Even if you don’t make the accompanying bread salad (though I highly recommend), after following Rodgers’ detailed but simple instructions you’ll be rewarded with the crispest and at the same time juiciest roast chicken ever.
